Personal: The Perfect Day

It’s been a long month…

Haha, I shouldn’t have blogged about posting more frequently after all. I was wondering if that would end up jinxing it but at the time I’d felt confident I’d be able to churn out content as I had quite a few posts planned. Alas, I had indeed been overly optimistic. Given the stress of moving, Jacky injuring his foot shortly after (to the extent we headed to the ER with a follow up trip to urgent care) plus a busy period at work all at the same time, I’ve been way too overwhelmed to write.

We still don’t have a dining table and chairs or a proper sofa or living area rug or chairs and half of our previous furniture doesn’t really fit with the space, but we’re working on it. Slowly but surely, we’ll get there :)

On Saturday, we finally had a breather. Jacky had recovered enough to limp around without crutches and we planned to go for a nice stroll downtown followed by a trip to Costco after lunch. We didn’t do our usual family Bible Study in the morning as my parents were out, so we went out for sushi at one of our favourite local restaurants before heading downtown.

The weather had been simply perfect: warm and sunny with a cool breeze. After our walk, we decided to go to a rooftop bar and enjoy the beautiful day (also because it just happened to be perfectly situated between 5 PokéStops and 2 Gyms hahaha). I think it might be the first rooftop bar we’ve ever been to together and we were blessed with what was probably the best seats on the roof.

We had a large corner table that gave us some of the most stunning views in multiple directions. The sun was shining brightly but we were afforded shade from 2 umbrellas, and the drinks we got were exactly what we were looking for. I ordered us some sliders and fries to share as well because why not.

We were limited to 1.5hrs dining time but that was the perfect amount of time. By the time we left, it was already after 6pm and Costco was just not going to happen, but I’d been wanting to watch the new Black Widow movie for a while, and since we were right next to a cinema we figured why not. The timing was perfect: a showing in 10min, with comfy seats in the perfect seating location, on a huge screen.

I realised on our way home that I was expecting a grocery delivery, and for a moment was worried that the groceries may have spoiled from sitting outside in the heat. But it turns out they’d only been delivered shortly before we arrived home – so perfect. The rest of the evening was spent relaxing.

It was just… the perfect day. Honestly the perfect, restful, relaxing day; something I’d desperately needed and was so thankful for. Thanks be to God that everything just worked out so wonderfully. On another note: since moving in, I now love the walls and our new home. God is so good to us.

Diet: What I Eat In A Day To Lose Weight

YAY the video is live~ I’m so happy I was finally able to complete the edits and upload it. I actually had a lot of fun editing it after iMovie started playing ball again, and I think I would definitely like to do another one some time.

Ironically, I actually gained a little weight after the video. However, that was the week before my period and we all know what happens then… Yep, extra water retention plus bloating. Don’t worry it went back down afterwards, but those are some of the foods I love to eat on my diet that are also low calorie, higher-protein, and filling to boot.

Not sure if anyone is actually going to watch it because it’s definitely not as exciting as other videos out there, plus my mukbang ends when I’m full, which is definitely rare in the world of mukbang on YouTube I think hahaha. Please let me know if you enjoyed the video!

Food: Shwe Myanmar Review II [Takeout]

Restaurant: Shwe Myanmar Burmese Cuisine, Livermore

  5. Coconut Rice – $3.00 – 10/10

Portion sizes: Excellent! They changed their packaging recently and the salad came in a gigantic container that we put into one of our large glass bowls at home for ease of mixing with the tamarind dressing. The lamb curry came in a large upright container, and the chicken curry came in a shorter upright container with 2pcs of paratha (fried, layered, flaky flatbread). I think they also gave us extra pieces of fried tofu <3

When Jacky went to pick up our order, the owner said that he’d just made dessert and that it had been a slow day, so he gifted us a carton of dessert too! I’m not sure what it’s called, but it tasted very creamy — almost milky, and had some coconut flakes sprinkled on top. To be served warm.

It’s potentially the shwe kyi cake listed on their website, which Google tells me is a sweet, Burmese semolina cake. Unfortunately I wasn’t a huge fan of the milky flavour but Jacky enjoyed it. I did like that it wasn’t very sweet though. Either way, it looks like we got a very large portion of it too. Huge thanks to Shwe Myanmar for their generosity!

Recipe: Greek Chicken Gyros with Tzatziki

In a previous post you may have seen me mention us having this for dinner:

Well, today, we did it again:

Except this time I tweaked a few additional things with the recipe that made it more suited to our taste. It was so good. There was less acidity overall so you could really taste the spices in the chicken, and the tzatziki was creamier, crunchier and more garlicky, which I absolutely loved.

We were so eager to dig in that we didn’t even bother taking proper photos this time haha. Jacky and I both liked it better than the first time I made it, so to ensure I remember what I actually did, I’m writing this down.

This recipe is a mix between this one by Cooking Classy and this one by Modern Honey with my own changes based on what we had in the fridge. 100% would recommend and plan to make it again regularly.

This recipe makes about 4-5 gyros. For the greek yoghurt, I tried a 0% fat one the first time and a Fage 2% fat lactose free one the second time. I much, much prefer the consistency and richer flavour of the Fage 2% fat greek yoghurt for this dish.

Diet: What I Eat In A Day To Lose Weight

Hello! I figured I could try to do one of these posts so, if you’re interested, you can see what my diet looks like these days. I do seem to be consistently losing a little weight every week right now while eating these foods — that was the goal, after all — and what I’m eating is definitely a little different from what I was eating before. I am really not used to doing these so I kinda forgot to take photos half the time (gah!) but at least I can write down what I ate.

I try to switch up my meals daily but keep them healthy and balanced as best as I can. I also like to have at least one of Coach Greg’s recipes every day. What I eat really varies a lot, but here’s a snapshot of one day!

Date: 8th September 2020

Meal 1: greek yoghurt, figs, berries, oat milk latte.

I did not add honey to my bowl because the figs were sweet enough for me. The latte in the tall glass was for Jacky. I am lactose intolerant but it seems that no-fat milk is actually acceptable for my stomach.

I don’t love the taste of greek yoghurt though, and my yoghurt-to-fruit ratio was a bit high for my liking, so I actually gave some of my spoonful to Jacky because I felt like it was too much for me. I definitely enjoyed it. I loved the fruit, and I’m glad I ate the greek yoghurt for the health benefits.
