Recipe: Potato Salad

This is adapted from A Spicy Perspective’s Potato Salad recipe. I’ve already made it twice (though my way takes a lot longer), have loved it both times and don’t want to forget how I made it in case I don’t make it again for a while. I’d definitely recommend checking out her website for the original recipe, along with other tips & tricks and lovely photos!

The below quantities should offer approx 8 servings.

For the salad:

  • 2.5lbs potatoes
  • 4 hard-boiled eggs
  • 2 stalks celery
  • 1/2 medium sweet onion
  • 3 stalks fresh dill
  • 1.5 tsp salt (and more to taste)
  • Smoked paprika, to serve (optional)

For the dressing:

  • 1 cup mayonnaise
  • 1 Tbsp yellow mustard
  • 2 Tbsp honey dijon mustard
  • 2/3 cups finely diced dill pickle (approx 4 pickles)
  • 3 stalks celery
  • 4 Tbsp dill pickle juice
  • 0.5 tsp smoked paprika
  • 0.5 tsp monk fruit sweetener
  • 1 tsp salt

Instructions:

Step 1 – cook the potatoes & eggs.

> Cut the potatoes into quarters and place into a large pot.
> Fill pot with cold water until the water is 1 inch above potatoes, then bring to a boil on high heat.
> Once boiling, add 1.5 tsp of salt and cook the potatoes for about 12-13min, or until fork tender.

> In a separate, smaller pot, submerge 4 eggs in cold water and bring to a boil on high heat.
> Once boiling, continue to cook eggs for ~6min, then remove from heat.
> Drain the boiling water, and fill the pot with cold water & some ice.

Step 2 – make the dressing.

> While the potatoes and eggs cook, finely dice the dill pickles and celery.
> Mix dressing ingredients in a medium bowl

Step 3 – assemble your salad.

> Once the potatoes are tender, drain the water then peel and cut the potatoes into approx 1 inch chunks. They’ll break apart a bit more as you mix up your salad.
> De-shell and dice up your eggs.
> Small dice your celery, onion and dill. You can leave some larger bits of dill for garnishing later if you like.
> Place all your salad ingredients into a large bowl and gently mix well. Your potatoes will break up a bit more at this point, and if you find the chunks are too large you can use your spoon/knife to cut up some larger chunks as desired.
> Gently mix in your dressing until the entire salad is well-coated.
> Taste, and add a bit more salt if needed.
> Garnish with smoked paprika and dill (optional. I didn’t and it still tasted great).

For best results, cover and refrigerate for a day or at least 4 hours before enjoying. That said, if you’re impatient like me, just dig right in with a spoon!

When You Get Bored And…

…chop your hair off!

Haha. It’s getting really hot these days, I am about a month away from having a baby and fully intend to do confinement afterwards, including not washing my hair for a while. I am no stranger to grabbing a pair of scissors and chopping off my hair in front of my bathroom mirror, so last night I figured, “Why not?”

The plan had been to cut my hair next month so that if the haircut sucked no one would see me for a month anyway. But things don’t always go according to plan! I couldn’t sleep well a couple of nights ago and ended up looking up the wolf cut that went viral a while back. So I tried it!

I was going to cut my hair short anyway so decided to first try out the wolf cut on a lesser amount of hair before I did the real cut (what can I say, I was curious). And honestly? I am pretty darn impressed. The back is actually pretty even with some light layers, whaaat! My initial chop looked lop-sided so I had to fix up the cut a little before untying the “unicorn”. But, darn, that’s not bad!

The difference isn’t too noticeable since I didn’t take off a massive amount, but you can see more layers framing my face, and it’s shorter, of course. I’m not a massive fan of how the layers turned out in the front to be honest; you can see where my strip of white hair basically becomes a horizontal cut, making it look choppy.

But that would have been easy to fix since I would have been able to see exactly what I was doing. If I were to have kept this cut, I would have softened the layers in the front so it blends in better with the rest of the hair. Alas, I had other plans…

Fitness: Favourite Pregnancy Workouts

Hellooo! Yep, I still have that Seattle post in my drafts, but we are getting towards the end of my pregnancy and I really wanted to document some of my workouts for future reference. My friend introduced me to a YouTube channel called Pregnancy & Postpartum TV and I have really appreciated her channel as a pregnancy workout & education resource.

I was basically a sick potato for the duration of my first trimester and absolutely could not move. However, I started feeling much better in my second trimester. It took time for me to adjust back to West Coast time and get over jet lag after my trip to Asia, but after I finally had enough rest and energy, I started doing her workouts as well as taking regular walks.

I set myself a daily step goal of 7,500 steps with the understanding that my realistic goal was no fewer than 4,500 steps/day. Even if I don’t go out for a walk, I tried to do one of her indoor walking workouts. Starting late February, I was consistently exercising 3-4x/week, which has since increased to 4-5x/week. I’m still working out but it’s definitely getting harder in my third trimester and baby is growing rapidly!

I started on this New 14 Day Pregnancy Workout Challenge, which was very helpful for getting to know some of the basics of how best to exercise during pregnancy. But to be honest, I didn’t end up finishing the entire 14 days (I finished day 11) as I started wanting to her other videos instead.

I’ve since tried a decent number of her videos and here are some of my absolute favourites that I always return to:

The walking workouts include a lot of full body cardio and totally help with my daily step goal. The other two also end up with me working up a sweat (but still able to maintain a conversation!) and were extra enjoyable because I could feel myself getting stronger as I repeated them on later days.

I am pretty certain I have built up a bit of extra muscle from working out during pregnancy, especially with all the squats I’ve been doing haha. I swear pregnancy is literally the best time to build muscle: you have built in progressive overload with the increased weight of your belly, you’re already eating in a surplus and your literal goal is to see the number on the scale increase at a healthy rate.

Plus you get the added benefit of exercising helping to manage your weight so that you’re not gaining toooo much. That said, I think I’m currently trending a little high on my weight gain, BUT my weight fluctuates a lot like it always does depending on my diet, my bowel movements, my workouts etc.

The photo above was taken just a couple of days ago. I’ve definitely gained some fat and am a similar size to when I first started my fitness journey in 2020 albeit with a much larger belly, but that’s to be expected! I could do a bit better with my weight management now, but to be honest, I’d rather just listen to my body and give my body whatever it needs to keep baby growing well.

Personal: A Little Self-Care

Hello! I’ve had a partial post in my drafts for literally the past three weeks and I just haven’t been able to finish writing it. So, instead of letting that hold me back from updating, I decided to just leave it in my drafts for now and write a little update. There is no structure to this post, it’s just a flood of thoughts that I wanted to jot down.

Life has been a little crazy these days. I’m not sure if it’s pregnancy or a symptom of getting old or a bit of both (probably both), but it’s ridiculous how easily I get tired these days. Actually… it’s probably 90% to do with the pregnancy.

I’m now in my third trimester and my body is feeling it. Baby is getting big and heavy! But the biggest pain point for me in recent months is how long it now takes for me to get over jet lag! Or just recover back to normalcy after a period away.

It took a solid 2-3 weeks for me to get over my Japan -> California jet lag, and then spring forward happened. Who would have thought a 1hr difference would wreck such havoc on my body? Daylight savings happened on March 12th and I’m only now back to waking up at 8:30~9am.

A couple of weeks ago we went away for a few days to celebrate our birthdays and babymoon (I would like to write about it, but who knows when I’ll get round to it. It was such a wonderful experience, albeit bittersweet since it was our final getaway as a couple). I was basically incapacitated for a solid couple of days after returning because I was so tired.

03/13/23 & A Little Announcement

Today’s a nice date, so it’s as good a day as any to make a little note and share a little news, eh? So, my last post was back in October. I was blogging regularly and still in the process of posting my Seattle updates after our anniversary trip. Then, absolute silence for months. Months! Not even a Merry Christmas, Happy New Year, blah blah blah post.

Well… this happened:

Hoooh boy. When I tell you I was not expecting it and it completely knocked me out… yeah, it completely knocked me out. There were signs, but I didn’t actually realise I was pregnant until I woke up one morning and I felt sick. I came downstairs and told my husband that I felt nauseous.

Then the puzzle pieces started falling into place: the beyond next level exhaustion I’d been feeling for the past couple of weeks (to the extent I had to go home early as I’d almost passed out at wushu class one evening, then skipped all subsequent classes because I couldn’t wake up from my 3-4hr afternoon nap on the sofa), my awkwardly heightened sense of smell, me going insane thinking that my boobs had gotten bigger…

Oh, and the fact that my period was already pretty late, lol.

I mean, I’d also been very stressed out from work at the time and my period has been known to come late at times I’ve felt under insane stress, so I literally just thought it was late. But, nope. The second I told Jacky I felt nauseous, we both just froze and looked at one another with a mix of surprise, wonderment, excitement topped with a healthy dollop of sheer horror.

I went out and got a couple of pregnancy tests that day and…

Time to make some calls to my doctor, lol.
